From Tradition to Innovation

The story of the Hayashi family's tea-growing business in Mie, Japan, is one of passion and progress. Kimihiko Hayashi and his nearly 87-year-old father, Iwao Hayashi, are the driving forces behind the family's tea production today. While Kimihiko continues the legacy and converts to organic farming, Iwao recalls the beginnings of his tea journey. Already in school, he was fascinated by tea-growing, an interest that eventually led him to found his own tea factory. The Hayashis are proud to carry their knowledge and love of tea into the next generation.

With the advent of organic farming, the Hayashi family is taking an innovative turn in their tea production history. Kimihiko, who now runs the farm, is in the process of taking over some of neighbors' gardens and converting them to organic farming. This is an exciting new chapter in the family's long history of tea farming. The innovations reflect their adaptability and desire to keep up with changing times while maintaining their deep connection to tradition. With their eyes firmly on the future, the Hayashi family is ready to continue their journey and share their organic tea creations with the world.

The organic tea garden

Offers a variety of teas & cultivars
Rare cultivars such as Sayama Kaori are used in the teas. They generally rely on medium to deep steaming of the leaves after harvesting. Due to special climatic conditions, the harvest in this region takes place a little later, in May. This means that the teas from this region develop a particularly floral-sweet taste. Various authentic varieties such as Sencha , Karigane , Bancha or Kabusecha are represented.
