What is Mizudashi?

Mizudashi iced tea is a cold brewing technique originating from Japan that has gained popularity around the world in recent years. The term "mizudashi" is composed of two Japanese kanji: 水 (mizu, water) and 出し (dashi, extraction). This method differs from traditional hot brewing methods in that the tea leaves are steeped in cold or ice-cold water, creating a uniquely mild and less bitter tea.

The difference to traditional hot brewed tea:

Unlike hot brewing, where the heat quickly extracts the flavors and ingredients from the tea leaves, the cold brewing process allows for a slower and gentler extraction. This results in a cold brew tea with less caffeine and tannins, making it particularly gentle on the stomach.

Suitable tea varieties for Mizudashi Cold Brew Tea

The extensive world of varieties and flavors of Mizudashi:

Basically, any tea can be prepared as a Mizudashi Cold Brew. However, shaded and deeply steamed varieties are particularly suitable, as they contain more amino acids and can be prepared particularly quickly due to the long steaming time.

However, it is recommended to prepare any tea as Mizudashi, as the infusion generally produces a sweeter, softer, fruitier and less bitter taste experience.

We definitely recommend preparing a Kabusecha , a Genmaicha and a Koucha (black tea) as a cold tea.
