Haruyo Morimoto's dedication to her organic tea gardens is palpable. As she strolls through the rows of tea bushes, her touch with the leaves is gentle, almost reverent, as if she were feeling the heartbeat of nature itself. Her instinct, honed over the years, helps her determine the ideal time to harvest. Each year, she and her husband Shigeru Morimoto produce the tea celebrated for its pure and smooth taste, a blend of freshness and umami. Unlike many tea farmers who prefer a stronger heat treatment, the Morimotos' gentle final heat treatment preserves the tea's inner freshness and highlights its unique character.
